Veld, value, and verification: The case for a grass-fed grading system

Across South Africa’s rangelands, a quiet shift is taking place. It is visible only to those who know how to read the landscape: cattle moving slowly across natural veld, grazing in patterns shaped by rainfall, season, and the patience of good stockmanship. It is a system built on time rather than torque, rhythm rather than force. And although it is not new, the way we understand it is changing fast.

Grass-fed beef has matured from a niche offering into a credible market segment grounded in ecological principles and long-term thinking. Yet the structures that support our national beef sector, grading, data systems, and recognition of quality, still lag. Too often, grass-fed cattle are evaluated through the lens of grain-finished animals, despite being reared in different conditions, under different pressures, and with different markers of excellence. A veld-finished ox is not merely a slower version of a feedlot animal. It is a different product, and our systems need to reflect that difference.

Our grading approach has for decades prioritised characteristics changed by confinement: high-energy diets, uniform fat deposition, and controlled environments. Grass-fed cattle express quality in more natural patterns. Their muscles develop through movement; their fat colour reflects seasons and pasture diversity; and their flavour carries the mineral signature of the land. These differences are not inconsistencies but are evidence of a production model that works with the environment rather than against it.

Density, disease, and resilience

One of the missing pieces in this conversation is the role of density and disease pressure. The recent uptick in foot-and-mouth disease (FMD) cases has highlighted what many producers have quietly known for years, namely that high-concentration systems carry inherent risks. Feedlots, by design, bring together animals from multiple sources into close quarters. The speed, scale, and density that make them efficient also increase the stakes when a disease event occurs. It is not a criticism – just an operational reality.

Grass-fed systems, by contrast, operate with far lower stocking densities. Animals are spread across natural veld, exposed to sunlight, space, and movement. They are managed in smaller, more stable groups, and their microbial exposure is influenced by the land rather than large-scale, mixed-origin environments. While no system is immune to disease, veld-based operations inherently reduce the risk of rapid spread. In moments like this, when FMD dominates headlines and affects market confidence, it becomes clear that decentralised, low-density production is a resilience strategy.

Verification and data

Alongside this ecological resilience sits another urgent need: the ability to truly measure and verify what grass-fed systems are delivering. South Africa has exceptional producers who track grazing recovery periods, manage low-density herds responsibly, and finish their cattle on grass. Yet much of their excellence remains undocumented because we lack standardised data collection and a grading language suitable for veld-reared animals.

We need a more structured approach to capturing animal performance, carcass outcomes, grazing history, welfare indicators, and veld conditions. This is to create trust rather than bureaucracy. When processors, retailers, and consumers can see evidence rather than assumptions, the entire value chain gains confidence. Data becomes the bridge between what producers know to be true and what the market is able to recognise.

Consumers, meanwhile, are already changing their expectations. They want beef that is natural, traceable, ethically raised, and reflective of South African landscapes rather than industrial uniformity. They are asking harder questions about origin, welfare, land use, and environmental impact. The interest in grass-fed beef is not a fad but is part of a broader return to food systems that feel grounded and honest.

We therefore need a credible, nationally recognised grass-fed framework that clearly defines what qualifies as grass-fed, verifies the production methods behind it, and grades the final product according to criteria that make sense for veld-finished cattle. This promotes clarity rather than competition between systems. Understanding what each production model offers means we can price correctly and manage expectations.

Pillars of a grass-fed framework

In practical terms, a credible, nationally recognised grass-fed framework would be built on three pillars: definition, verification, and grading. The first pillar is clarity. South Africa would need a single definition of what ‘grass fed’ and ‘veld finished’ mean in our context. This would include details such as the proportion of nutrition that must come from pasture, whether any supplemental feeding is allowed, the type of grazing systems permitted, and baseline welfare expectations. This does not mean a rigid system; rather, it ensures that the term has a consistent meaning across provinces and production environments.

The second pillar is verification. A national protocol would include a straightforward audit trail that tracks an animal from its farm of origin to the carcass rail. This could be done through a digital system that records grazing history, treatments, movements, and finishing method. It would not require burdensome administration. In fact, most producers already capture much of this information through their own management practices. The role of a national framework would simply be to standardise it so that retailers and consumers can trust that ‘grass fed’ truly reflects a veld-based life.

The third pillar is grading, the part that is currently missing. A grass-fed carcass should be assessed according to indicators that make sense for veld-reared animals. This includes fat colour, muscle maturity, flavour profile, pH behaviour, and natural variation in marbling. A grading language built specifically for grass-fed beef would give producers the feedback they need to keep improving while allowing processors and retailers to plan around consistent quality. In an ideal world this framework would be simple, transparent, and widely adopted, reflecting the integrity of South African veld and the skill of the producers who steward it.

A unique position

South Africa is uniquely positioned to lead this evolution. Our rangelands are vast and varied, and our producers are already practicing forms of regenerative management that the rest of the world is only beginning to adopt. The potential is enormous economically and environmentally, not to mention the effect it would have on long-term food security. What we lack is the structure to capture and communicate this value with the precision the modern market requires.

Grass-fed beef has already proven its worth on farms across the country. The next step is to prove it within our systems. With better data, clearer definitions, and a grading standard designed for veld-reared animals, South Africa can build a resilient and transparent grass-fed ecosystem that will boost consumer trust.

The work ahead is practical and achievable.
