It is almost time for the December holidays and South Africans are certainly looking forward to spending more time at the braai this summer. To celebrate the warm weather and break from work, why not try out a new recipe such as our gourmet boerewors rolls?
First prepare your own griddlecakes (roosterkoeke) on the grill. This will replace the boring, regular shop-bought buns. Secondly, braai your favourite boerewors. Lastly, top off your homemade boerewors roll with gourmet ingredients such as caramelised onions, homemade tomato sheba, achar, mustard and chimichurri sauce.
Griddle cakes (roosterkoeke)
Ingredients
- 1 ball of shop-bought bread dough
- ½ cup of flour
Method
- Sprinkle your working surface and hands with flour.
- Break off small pieces of dough from the ball and
roll slightly flatter. - Place on flour-sprinkled surface and cover to rise.
- When the dough balls have doubled in size, they are
ready to go on the grill. - Braai on a high grill on moderate coals and turn
them often. When they are brown and have a
hollow sound to them, they are ready.
Assemble
Braai your favourite boerewors and serve in fresh griddlecakes, generously lathered with real butter and some or all of the gourmet toppings and sauces mentioned below.
Caramelised onions
Slowly fry butter, onions and sugar in
a pan to make caramelised onions.
Chimichurri
Chimichurri is an Argentinian meat sauce prepared from fresh herbs and chilli that is used on grilled meats as a marinade or to serve.
