Halloumi is one of the easiest cheeses to make and also makes for an easy starter full of flavour. These Halloumi skewers are perfect for a finger-snack to be enjoyed outside before a braai with a drink of your choice. Enjoy the delights of farm fare in the city with the recipe below. 

Ingredients:

Skewers:

  • 250g Halloumi, cut into large cubes
  • 16 Cherry tomatoes
  • Wooden skewers, soaked in water for half an hour

Dressing:

  • 1 Lime (juice & zest)
  • 1 tbsp Honey
  • 2 tbsp Olive Oil
  • 1 tbsp White wine or cider vinegar

Method:

  1. Heat up the grill
  2. Thread the tomatoes & halloumi chunks onto the skewers
  3. Lay the skewers on the grill. Grill for about 10 minutes, turning regularly until the halloumi is crisp and brown
  4. Meanwhile, whisk all the dressing ingredients together
  5. When the skewers are done, drizzle the dressing over
