Classification can make purchases easier

It is easy for a consumer to walk into a butchery and order class  A meat, confident that her butcher will give her a piece of meat containing the correct amount of fat, the right texture and all the properties needed to brag with around the campfire. Few consumers know, however, that class A only indicates the age of the animal and that the “0” to “6” included in the classification indicates the amount of fat.
