This savoury spice-and-nut mix has Egyptian origins, and is an easy and flavoursome way to use fresh farm fare like nuts, seeds and spices. Dukkha adds crunch and pizzazz to just about everything from salads and stews to deserts. It also makes for a delicious dip for snacks: Simply dip your snack of choice in olive oil and balsamic vinegar and then into the dukkha. The condiment is traditionally made with nuts, coriander, cumin seeds, salt and sesame seeds. It can also include other seeds such as fennel and peppercorns. Ingredients do, however, vary.

Below are two dukkha recipes from Pouyoukas Foods. They are guaranteed to spice up your dinner menu. Dip bread into olive oil, then into the mixture and enjoy this unique and addictive mix. Also sprinkle over salads or any other dish.

Sesame seed, lemongrass and chilli dukkha

Ingredients:

  • 200g Pouyoukas sesame seeds
  • ½ stick lemongrass, pulsed in a food processor
  • 1 teaspoon (5mℓ) dried chilli flakes
  • 1 tablespoon (15mℓ) olive oil
  • Sea salt and freshly ground black pepper, to taste

Method:

  1. Place the sesame seeds, lemongrass, chilli flakes and olive oil on a lined baking tray and season with sea salt and freshly ground black pepper.
  2. Bake in a preheated 180°C oven for 10–12 minutes, stirring halfway through the baking process.

Roasted and spiced pumpkinseed dukkha

Ingredients:

  • 300g Pouyoukas pumpkinseeds
  • 2 tablespoons (30mℓ) Pouyoukas sesame seeds
  • 1 tablespoon (15mℓ) olive oil
  • 1 tablespoon (15mℓ) ground cumin
  • 1 tablespoon (15mℓ) ground coriander
  • 1 teaspoon (5mℓ) dried chilli flakes
  • 1 teaspoon (5mℓ) cumin seeds
  • Sea salt and freshly ground black pepper, to taste

Method:

  1. Place the pumpkinseeds, olive oil, cumin, coriander, chilli flakes, cumin and sesame seeds on a lined baking tray.
  2. Toss well; season with sea salt and freshly ground black pepper.
  3. Bake in a preheated 180°C oven for 10–12 minutes, stirring halfway through the baking process.
  4. Both the dukkhas should be served with olive oil, balsamic vinegar and freshly baked bread. – AGT
